Creamy Spinach Gnocchi

This hearty pasta is a great way to get in your veggies while also enjoying a creamy traditional flavor! Try adding your favorite protein like grilled chicken, shrimp, or even steak.
Servings per recipe: 4-6
Prep Time: 10 mins Cook Time: 20 mins Total Time: 30 mins

Ingredients:
1 lb package whole wheat gnocchi
2 Tbsp Canola oil butter spread
1 garlic clove, minced
3 Tbsp whole wheat flour
1 14 oz can light coconut milk
4 oz frozen spinach, thawed & squeezed dry
1/4 cup sundried tomatoes, chopped
pepper, to taste
1 cup parmesan cheese, shredded

Procedure:
1. Cook gnocchi according to package instructions and set aside to cool.
2. In medium saucepan, melt better over medium heat. Add garlic and stir until fragrant, about one minute.
3. Add flour and whisk, allowing to thicken, for about one minute.     4. Slowly add milk and cook for another 2-3 minutes, breaking up any lumps that form.
5. Stir in spinach, tomatoes, and pepper. Allow to thicken for another five minutes. Remove from heat and stir in cheese. Add gnocchi to sauce mixture and serve immediately.

Quick Tips:
Use organic ingredients where feasible
Try adding cooked chicken, shrimp, Canadian bacon, or salmon.
If sauce appears thinner than desired, try adding more flour or less milk.
For an extra kick, try adding a dash of red pepper flakes!
Storage:
Let cool completely before storing in air tight container. Store in refrigerator for up to 3 days or in the freezer for up to 1 month.
